Cauliflower Mushroom Gravy
Hello Dear OWL Lovers,
The holidays are upon us, can you believe it. November is already here. There is no better time to cozy up, make dinner plans with the ones you love dearest, and break out the old family recipe book. Although let's be honest, most of us here have one gut sensitivity or another when it comes to old holiday classic dishes. Which can make holiday dinner with the fam challenging. With that in mind, I am happy to share today's recipe with you all as it is a delicious spin on an old-time classic.
Cauliflower Mushroom Gravy - she is hot, savory, and gluten-free. The best part about this gravy is that it's free of all common allergens, yet it is still amazingly savory, creamy, and oh so delicious. Who loves gravy? I have so many memories of sitting at the kid's table over Thanksgiving with my family. I remember always eating heaping spoon loads of just gravy because I loved it so much. Did anyone else do this? Well, if you did, things are about to become very nostalgic after you try this gravy. It is heaping spoonful worthy, and you'll undoubtedly be going back for more.
I do have to say that creating recipes with gut health in mind is truly one of my greatest joys. I love cooking- always have. Creating here for you all allows me to be creative, innovative, and think outside of the box, lighting up my soul. The more I create for this blog, the more I am reminded that simplicity is more in so many valuable ways. And I feel like I hit the jackpot each time a bone broth-based infused spin-off comes out just right or even better than I imagined. Today's recipe was one of those moments for sure. I genuinely feel like this gravy is so close, if not better, than the classics. I hope you all truly enjoy this dish with your friends and family this holiday season.
As always, before we get cookin', let's go over the nutritional benefits of today's all-star ingredients. We are working with some favorites for sure. Portobello mushrooms, cauliflower, and our beloved bone broth elixirs. The lead of today's recipe is our Bone Broth Elixir (no need for concern, vegans- replace the bone broth with our Vegan Mineral Broth Elixir, which is just as delicious.)
It feels exciting to dive into the benefits of our bone broth as it was indeed bone broth that brought myself and the founder of OWL, Lindsey Erin, together almost five years ago. Back then, I had never heard of bone broth and remembered thinking that it sounded weird. She hired me to cook the broth with her in her Venice Beach kitchen back when she first started. I tried it, loved it, and learned so much about the healing benefits of bone broth too. All of that is to say that I am still a huge fan to this day.
With that said, let's get into the healing benefits of our broth. Our bone broth is rich in nutrition and has an abundance of collagen and protein. The collagen supports strong bones and alleviates pain in the joints. The nutrients found in our broth are incredibly nourishing and healing for the body. It is one of the simplest and least expensive ways to improve your overall health and heal your gut. Bone broth provides the building blocks for glowing and youthful skin. Our broth enhances muscle strength and tissue repair. It contains a natural source of nutrients like collagen, gelatin, trace minerals, and anti-inflammatory amino acids. The taste is terrific, is oh so nourishing, and perfect for infusing holiday classics recipes.
Next, we have a very cherished superfood, the Portobello Mushroom. Did you know that portobello mushrooms have quite magical health benefits? They have a rich array of vitamins and nutrients that boost your immune system and can help fight and prevent certain cancers. Also rich in B vitamins, niacin, and pantothenic acid. Portobello mushrooms are high in antioxidants and have anti-inflammatory properties. They are also an excellent source of selenium, a critical mineral that can be challenging to get in daily. Selenium helps the body produce hormones, supports the thyroid and the immune system, and even offers protection against heart disease. The macro and macronutrients of portobello mushrooms make them an excellent food to include in any dish and take this gravy to the next level.
We all love and adore cauliflower, right?! It's a classic veggie that can feel very underrated at times, in my opinion. I know one thing for sure, we should be celebrating cauliflower. It is super tasty and packed full of vital minerals and nutrients. It's high in Vitamin C, which can help prevent colds, boost your immunity, and improve your natural glow. Cauliflower is one of the healthiest vegetables around. It has essential minerals such as potassium, magnesium, manganese, and phosphorus. It is an excellent idea to serve cauliflower raw or steamed so it can retain these valuable nutrients. I personally love steaming my cauliflower and enjoy it often. Cauliflower is also rich in fiber, which is excellent for gut health. Cauliflower has so many amazing benefits. It's an absolute favorite for sure.
Ok, now that we are all well informed about how truly nourishing this gravy is, let's get cookin'!
Cauliflower Mushroom Gravy
INGREDIENTS
- 2 cups chopped portobello mushrooms
- 2 cups cauliflower
- 2 cups OWL Broth Elixir (we used Turkey!)
- 2 tbsp ghee or coconut oil
- 1 tsp minced fresh thyme
- 1 tbsp minced fresh rosemary
- 1 tsp liquid aminos
- sea salt + black pepper to taste
- 2 cups plant-based milk
INSTRUCTIONS
- To make, get into the mood by throwing on your favorite holiday playlist. Light some candles and break out your kitchen aids and tools. You will need a Dutch oven or a sauté pan, a veggie steamer, a knife, cutting board, measuring spoons, and a high powered blender. And all of your yummy ingredients, of course.
- Start by steaming your cauliflower until soft to the poke. While that's going, you can start to sauté your mushrooms in ghee or coconut oil along with your rosemary and thyme. You'll want to cook them on medium-high heat until they are golden brown and crispy. Next, you will want to heat up your plant milk and broth until perfectly warm. Be careful not to heat too high as the milk will curdle, which causes it to loos its creamy texture. When the mushrooms are gold, the cauliflower is cooked, and your liquids warm, it's time to blend it all into an epic gravy. Throw all of your ingredients into a high-powered blender and blend until silky smooth. Serve with your favorite veggies or holiday favorites.
